This recipe uses our Grass-Fed, Eye of Round Roll instead of a crust. The secret is tenderizing and marinating the beef, cooking it briefly, then topping it with your favorites. The recipe below features a traditional organic tomato base pizza sauce, caramelized onions, bell peppers and sliced mushrooms. Ok… we added a bit of mozzarella cheese, but hey… it’s pizza! we couldn’t resist!
- Novy Ranches Grass-Fed Beef Eye of Round Roll - 2-3 lb
- Pizza Sauce - 1 cup
- shredded Mozzarella Cheese (optional - 8 oz.
- Bell Pepper - 1
- Mushrooms, sliced - 8 oz.
- Onion, chopped - 1
- Marinade for Eye of Round Roll (below) -
- Eye of Round Roll Marinade
- extra virgin olive oil - 1/3 cup
- balsamic vinegar - 1/3 cup
- crushed garlic - 1 Tbsp
- chopped basil - 1 tsp
- chopped oregano - 1/2 tsp
- fresh ground pepper - 1/4 tsp
Step 1. Place Eye of Round Roll on a large cutting board. Sprinkle one side with salt and beat mercilessly with a
Meat Tenderizing Hammer. ...Harder! Turn the Roll over and repeat the salt and tenderizing process.
When done, meat should be about 1/4 - 3/8 inch thick.
Step 2. Thoroughly mix Marinade ingredients. Place the tenderized Eye of Round Roll in a glass container or
zip lock bag. Add the marinade, cover or seal and marinate several hours or overnight.
Step 4. While beef is in the oven, sauté peppers and mushrooms; caramelize the onions; and warm the pizza
sauce in a saucepan.
Step 6. Spread pizza sauce liberally over the Beef. Add cheese and
toppings. Now that you have the marinated Beef "Crust" down,
feel free to experiment and substitute any of your own favorite
toppings if you'd like.
